Healthy Body by You is happy to feature Vegan Zebra to bring us an amazing “Chicken” Caesar Salad, which could easily be dinner tomorrow!

It’s a lazy Saturday night here at the Zebra homestead. A house full of teenagers rocking out a Sweet 16 celebration last night might very well have stolen my soul, rendering me just about useless today . 

Suffice it to say that my spending half the day cleaning up after these hormonal trolls, resulted in my feeling a little less than gumptious about making dinner for everyone. Miraculously, I did manage to throw something together; a Vegan Chicken Caesar Salad. I’d like to share it with you because it really was easy and fast, and some people just need that type of dinner some days. I didn’t even bust out my camera or lighting for this one, that’s just how drained I am. I took these pictures with my awesome new Samsung Note 9. She does some pretty good work, I think.

Those are a few of my favorite vegan products that I use on a regular basis. So, to make this delicious Vegan Caesar Salad, you will need those ones pictured above, as well as Romaine lettuce, two slices of vegan bread, Panko crumbs, garlic powder, salt, and pepper. That’s it!

The Execution

Open and drain the jackfruit and place the pieces into a bowl.

Create the Panko mixture by combing the Panko, Garlic Powder, Rawmesean, Salt, and Pepper. Stir together well.

The jackfruit is wet because it sits in a brine in the can. We use this moisture and slight saltiness to our advantage in this dish. Now, take each piece of jackfruit and press it into the Panko mixture. Keep rolling the pieces so that you get all of the sides, to each piece, and place them in a dish as you complete them. We are not aiming to completely cover the jackfruit as though we were battering them for deep frying. Just enough to provide it with that nice subtle crunch, and delicious savory flavor. Pretty cool, huh? Vegan Chicken Caesar Salad is actually just a can of fruit 😀

Turn the stove heat to a bit above medium and add the butter. Allow it to melt and then place all of the pieces of jackfruit in, more carefully than dumping though, to be sure you don’t shake off the Panko mix. Cook on this heat until the jackfruit achieves a texture and crunch that you like. Remember- jackfruit is edible right out of the rind of the fruit (or can) so there is no minimum time to cook.

In the meantime, chop up your lettuce and toast two pieces of bread very lightly. When they are done, add a thin layer of butter and a sprinkle of salt and garlic powder. If you have a toaster oven rather than a toaster, go ahead and throw the bread back in there for another minute or so to get it a little more like garlic toast. When it’s done just chop it up into squares and set aside.

The jackfruit should be good and ready after about 10 minutes of flipping it around to get all the sides of each piece. It’s time to assemble. We have our lettuce in the bowl. Add a sprinkle of Follow Your Heart shredded Parmesan, the jackfruit, the croutons we made, and some pepper. Add a little more cheese and finally, the Follow Your Heart Caesar Dressing (this does have soy in it, FYI). Boom. Bomb @ss diggity Fried Chicken Caesar Salad in 15 minutes or less, and virtually no mess. It’s even better because it is a cruelty-free nutritionally superior form of the traditional Caesar Salad, and nobody had to die to make your palate happy.

I make this Vegan Caesar Salad gluten-free with vegan, gluten-free bread and gluten-free Panko. You definitely don’t have to, but it IS possible, and very good.

Vegan Cesar Salad

This cruelty-free, nutrient rich variation of the traditional Cesar Salad is so easy to make and always a crowd pleaser.

Ingredients

  • 1 head Romaine Lettuce
  • 1 can Jackfruit
  • 1/3 cup Panko
  • 1 TBSP Rawmesean
  • 1/2 TBSP Garlic Powder
  • Salt & Pepper to your taste
  • 1 TBSP Earth Balance Butter
  • 1/4 cup Parmesan Cheese Shreds, divided
  • 2 TBSP Cesar Dressing
  • For Croutons
  • 2 pieces Vegan Bread
  • 1 thin layer Earth Balance Butter on each piece
  • Salt and Garlic Powder to your taste A little goes a long way!

Instructions

  1. Open and drain the jackfruit and place the pieces into a bowl.
  2. Create the Panko mixture by combing the Panko, Garlic Powder, Rawmesean, Salt, and Pepper. Stir together well.
  3. Take each piece of jackfruit and press it into the Panko mixture. Keep rolling the pieces so that you get all of the sides, to each piece, and place them in a dish as you complete them.
  4. Turn the stove heat to a bit above medium and add the butter. Allow it to melt and then carefully (gingerly, even) place all of the pieces of jackfruit in the pan.  Cook on this heat until the jackfruit achieves a texture and crunch that appeals to you.  Be sure to flip it to a new side frequently.
  5. Wash and dry lettuce.  Chop it up and place into salad bowl.
  6. Toast the bread very lightly. When they are done, add a thin layer of butter and a sprinkle of salt and garlic powder. If you have a toaster oven rather than a toaster, go ahead and throw the bread back in there for another minute or so to get it a little more like garlic toast.  You could do this on the stove in a pan (like you would with a grilled cheese, for example), or in the oven.  You have options if you don’t have a toaster oven.  When it’s done just chop it up into squares and set aside.
