Whether it’s because I had a stressful week or because I had an amazing week, there are always days where I feel desert is in order. But whenever I have some type of sweet snack I have remorse and feel like I have done a bad thing. I feel like I have thrown all my hard work out the window with just these 10 minutes of sweet indulgence. It’s the worst. If there was only a way to have a sweet treat and still be healthy *thinking desperately*
I know that dark chocolate is a great healthy option when I want some chocolate. But as we know, dark chocolate as a bar does get a bit on the bitter side by the end. Truthfully, it doesn’t satisfy the craving. I long for a warm baked cookie or brownie. I need something fresh baked and out the oven. Especially when the day has been super stressful.
I realized that when you look for healthy options or variations of some of your favorite things, nothing ever looks appetizing. Nor do the ingredients make it seem like it will even taste good. So, I felt like I was limited in what I can have guilt free. I took some time and some test batches but I was able to come up with something that gave me the sweetness that I was looking for yet didn’t give me the super guilt trip after I finished. I present to you GUILT FREE CHOCOLATE CHIP COOKIES!!! And the best part is you can make them in a small batch.
What You’ll Need:
1 tbs coconut oil – softened
2 tbs raw sugar
4 tbs all-purpose flour
1 tea baking powder
¾ tbs of water – apx
1 tea of vanilla extract
2 tbs mini dark chocolate chips
What You’ll Do:
Preheat oven to 350 degrees
Cream together the coconut oil and sugar until nice and smooth. Add in the flour and baking powder and kneading them into the oil mixture with your hands until the mixture is crumbly. Pour in the water and vanilla slowly while continuing to knead. Lastly, knead in the chocolate chips.
Divide into 4 balls (about a tablespoon each) and flatten on a baking sheet lined with parchment paper. Bake for about 8 – 10 minutes until they are baked all the way through and golden brown.
Let cool as desired and ENJOY!!!
